Gourmet Pasta with Chicken & Veggies

I adapted this recipe from one my mom used to cook often, and I have always loved it. Curiously, she always called it "Greek Pasta," but after scouring the internet for similar recipes, I found no Greek pasta recipes that were similar. Alas, I decided to call this "Gourmet Pasta" because it always stood out among other pasta dishes to me (maybe because I LOVE mushrooms and cheese!). Gourmet Pasta with Chicken & Veggies
  • 1/2 lb linguine or fettuccine
  • 1/4 cup butter
  • 2 chicken breasts (raw), sliced
  • 2 cups mushrooms, sliced
  • 1 large red bell pepper, julienned
  • 1 small-medium red onion, julienned
  • 3 cups baby spinach
  • 2 tsp seasoning salt
  • 1 tsp black pepper
  • 2 tsp red pepper flakes
  • 1 cup grated Parmesan cheese
1. Add 2-4 quarts of water to a large pot and heat on high until boiling. Once water is boiling, add pasta and cook according to package instructions until al dente. Drain pasta and set aside.2. While the water is heating up, heat a large skillet over medium-high heat. Begin, slicing chicken, mushrooms, bell pepper, and onion (make sure the chicken is prepared on a separate cutting board from the vegetables to avoid cross-contamination).3. Once chicken and vegetables are prepped, add butter to skillet. Once melted, add all veggies except spinach. Add 1 tsp seasoning salt and 1/2 tsp black pepper. Saute until chicken is almost cooked through, about 5 minutes.4. Add spinach and cook until wilted.5. Reduce heat to low and add cooked pasta to chicken and vegetables.6. Sprinkle cheese and remaining salt, pepper, and red pepper flakes, and toss until well-distributed.7. Remove from heat when cheese is just melted.
