Peanut Butter Chocolate Chip Energy Bites

These energy bites are one of my favorite snacks to make when I want something quick that will nourish my body (hello, protein, fiber, unsaturated fats) and satisfy my frequent thoughts of peanut butter and chocolate (one of my favorite combinations!). This recipe is so easy to throw together and always a big hit with anyone that tries them. Enjoy!

Peanut Butter Chocolate Chip Energy Bites
Ingredients
  • 1 cup oats
  • 1/2 cup ground flaxseeds
  • 2/3 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 Tbsp vanilla extract
  • 1/2 cup chocolate chips
Instructions
1. Combine oats and flaxseeds in medium-large bowl.2. In a microwave-safe bowl or cup, add peanut butter and sweetener. Heat on 50% power for 1 minute, or until peanut butter is melted.3. Pour peanut butter mixture over oats mixture, add vanilla extract, and stir until well-combined. A fork works well for this.4. Once combined, add in chocolate chips and distribute throughout.5. Place in fridge or freezer for 10 minutes to harden slightly.6. Remove from fridge or freezer and form into 12 balls. Refrigerate for up to one week.
