Black Bean Chocolate Chip Brownies

Black bean brownies are my favorite dessert (other than ice cream!) for both the way they taste and their nutrition profile. Black beans are an excellent source of protein, fiber, B vitamins, potassium, iron, calcium, magnesium, manganese, copper, and phosphorous. They also create an amazing fudge-y texture that is difficult to perfect with flour-based brownies. And seriously, you won't even notice these brownies have beans instead of flour, so no need to worry about these tasting like a substitute -- they are really THAT good! Black Bean Chocolate Chip Brownies
  • 15 oz black beans, drained/rinsed
  • 1/4 cup melted butter or coconut oil
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 cup cocoa powder
  • 1/4 cup coconut sugar or stevia
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 2 tsp ground instant coffee (optional)
  • 3/4 cup chocolate chips
1. Preheat oven to 350 degrees F.2. Lightly grease an 8" x 8" baking dish with cooking spray.3. Add all wet ingredients (beans, butter/oil, maple syrup, eggs, vanilla) to blender or food processor and process until smooth, about 1 minute.4. In a medium bowl, combine all dry ingredients except chocolate chips (cocoa powder, sugar/stevia, salt, baking powder, instant coffee).5. Pour black bean mix into bowl with dry ingredients and mix until just combined.6. Fold in chocolate chips until distributed throughout.7. Add batter to baking dish, then bake for 22-27 minutes or until top is set and a toothpick inserted throughout comes out clean.
